Meatloaf

Last week, our little one was sick for Christmas with an ear infection. Coming into this week we are all wore slap out and craving some comfort foods. So I’ve chosen one of our favorites- meatloaf. Everyone seems to have their own version. I am going to share with you a twist off of my mother-n-loves wonderful recipe (the best one out there). It is super simple to make.

INGREDIENTS

  • 2-3 pounds ground beef 
  • 1 medium yellow onion, chopped 
  • 3 cloves garlic 
  • 1-2 stalks celery, cut  
  • 2 carrots, peeled and cut 
  • 1 large egg 
  • squeeze of cup ketchup 
  • 4 teaspoons dry mustard
  • 1/2 cup mayo 
  • 1 tablespoon salt 
  • handful of rolled oats (not instant but quick cook is ok)
  • 1 package meatloaf mix (i cheat here)

DIRECTIONS

  1. Preheat oven to 400 degrees.

  2. Place onion, garlic, celery, and carrots,  in food processor; pulse until finely chopped. Add to beef mixture; combine using your hands. Add meatloaf mix, egg, ketchup, salt, dry mustard, and oats, combine thoroughly, using your hands. Place in a loaf pan.

  3. Place the pan on a baking sheet to catch drippings, and place in oven. Bake until a meat thermometer inserted in the center reaches 160 degrees, about 1 1/2 hours. (If the top of the meatloaf gets too dark, cover with foil and continue baking.) Let meatloaf stand 20 minutes before slicing.
