If you are looking for a healthy and filling meal, I have a delicious turkey and cheese zucchini recipe you must try. This is even great for 21 Day Fix guys and gals. This idea not only adds nutrition to your diet but fills your tummy as well. This recipe is low-carb, so if you are doing the 21 Day fix, it will be perfect for you. And,wait until you taste all the flavors! The best part to me is the cheese! I only cooked these for myself in a trial run, so if you are looking to feed the entire family just double or triple the recipe.

Clean Eating Turkey and Cheese Zucchini Boats

Ingredient before cheese or baking

 

 

Ingredients

  1. 2 zucchini, cut in half lengthwise
  2. 1/2 cup of salsa (your choice on hotness)
  3. 1/2 ground turkey
  4. 1 tsp garlic powder
  5. 1 tsp paprika
  6. 1/2 tsp salt
  7. 1/4 cup chopped red or green onion
  8. 1/2 cup low-fat cheese

 

Directions 

  • Preheat oven to 400F.
  • Hollow out the center of the zucchini and save 1/2 for mix
  • Brown turkey, once brown add chili powder, garlic powder, paprika, and salt
  • Stir and simmer on low for 12 minutes
  • Use a spoon to place meat mix evenly in hollowed zucchini, press firmly to pack in
  • Top with shredded cheese
  • Cover with foil
  • Bake 25 – 30 minutes, until cheese is melted and zucchini is fully cooked
