Clean Eating Vanilla and Pumpkin Protein Pancakes

Last week while in the mountains, I stuffed my face with tons of fatty foods. Looking through the photographs, I was super upset at my weight gain. This has been a struggle since I turned 30. I am not super over weight, but lets be honest. Who want a pooch? I purchased the 21 day fix from my cousin a few months back and was too busy to take it on at the time. That “too busy” was going to change immediately. I came home and logged onto Pinterest for healthy meal planning ideas (I love to meal plan). Surprisingly, there were so many healthy choices to the foods I already love. It was almost a relief to see a healthier choice. It is a no brainer, if you take in less calories than you burn each day, you will lose weight. My first step was breakfast.Take a look at these delicious & easy pancakes.

Clean Eating Vanilla and Pumpkin Protein Pancakes

Ingredient

  • 1 cup raw pumpkin
  • 1 scoop vanilla Shakelogy (or protein powder)
  • 4 egg whites
  • 1/2 oats
  • 1/2 cup non-fat Greek yogurt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 tbsp unsweetened vanilla almond milk

Directions:

  • Mix all dry ingredients together
  • Whisk the egg whites, pumpkin and Greek yogurt together. Add the almost milk to egg mixture and stir well.
  • Ladle onto preheated griddle/pan
