Cheesy Cauliflower and Carrots Tots

Say hello to healthy eating that tastes terrific. I am here to tell you that eating healthy doesn’t always have to taste bland. Today, I made these tasty tots that are out-of-this world with flavor. If you follow our blog then you know my love for potatos and to be on a diet without them just about takes me to the limit. I mean really, I could eat potatoes mashed, fried, steamed, pancaked… and, well, you get the picture!

 Cheesy Cauliflower and Carrots Tots

To get your mouth watering-think garlicky, cheesy tots just baked with carrots and cauliflower. These babies are so good and super heathy for an entree side or, if you’re a snack eater, these are great for all of those kitchen “drive-bys”. Skipping the potatoes never sounds like fun to me but after making these, it changed my mind and I’ve sort of found a potato substitute. These treats are even good for the kids who don’t normally eat the veggies. I’ve never been particularly blown away by the sound of cauliflower tots, but working to save calories and by eating a similar flavor, this was a good choice for me. You can even add a few of your favor ingredients to spice it up if you like. Let me tell ya’ how to make um’.

Ingredients

  • 1 head of cauliflower
  • 2 carrot’s green onion, sliced, white part only
  • 1 egg
  • 1 cup panko breadcrumbs
  • 1/4 cup grated parmensan
  • 1 cup grated reduced fat sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 3 cups water
  • 1/2 teaspoon salt
  • salt and pepper to taste

Instructions

  • Preheat oven to 400F.
  • Place water in pan and bring to a boil
  • Add cauliflower and carrots (you can steam if you have a steamer 40 minutes)
  • Drain, rinse and pat dry with paper towel
  • Combine green inion, garlic, breadcrumbs, egg, cheese, salt and pepper
  • Use food processor or hand mash (you want this to be lumpy with texture)
  • Add cheese mixture
  • Spoon out about 2 tablespoons of mixture into a ball
  • Transfer to baking sheet
  • Press to mash into a more oval shape (this will make it easier for perfectly cooked tots)
  • Bake 15 minute
  • Flip the tots and continue another 15
  • You tots should be golden brown (cook longer if needed)
  • Serve with a dipping sauce or plan
